Pancake Recipe:
1. Sift flour into a bowl. Make a well in the centre. Whisk together the milk and eggs in a large bowl.

Thanks to Olivia Kelly from Porter Novelli for giving me the heads up about Pancake Day happenings in Martin Place between 7 am til 11 am. Arriving around 9.45 am I managed to see a few keen people still flipping pancakes around the place trying to beat the Guinness World Records for the most pancakes flipped in one minute — supposedly 117. I caught Brad Jolly from Alchemy Restaurant still flipping a few himself. There were some successful looking pancakes being cooked and perhaps some not so successful pancakes unless you prefer them a bit black and burnt. Usually not allowing enough time for breakfast I welcomed the free pancakes being given out. I chose banana, strawberry, jam and cream for my topping which helped fill me up for the day — I would have gone for seconds or thirds if I had the time. I rally love pancakes with a mixed berry compote and freshly whipped cream.
Pancake Recipe:
Makes 20 small pancakes
Preparation time: 10 minutes, Cooking time: 15 minutes

4 eggs
1½ cups self-raising flour
1½ cups (375mL) skim milk
1 tbs low fat spread
1. Sift flour into a bowl. Make a well in the centre. Whisk together the milk and eggs in a large bowl.
2. Add the milk mixture to the flour mixture, whisking constantly until a smooth batter forms.
3. Heat a non-stick frying pan over low heat and melt a little low fat spread.
4. Add 2 tablespoons of mixture, spread quickly to form a circle. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom; turn and brown the other side.
5. Serve these delicious pancakes with your favourite topping.
Some Flippin' Facts:
• The largest pancake ever made and flipped measured 15.01m wide, 2.5cm deep and weighed three tonnes.
• The second side of a pancake only takes half the amount of time to cook as the first.
• Pancakes have traditionally been eaten on Shrove Tuesday for more than 1,000 years!
SNAPSHOT REVIEW:
PROS: Very simple recipe and can be topped with many different ingredients depending on what your taste prefers, Usually a crowd pleaser
CONS: Easily burnt if you're not careful, Not so good for gluten and dairy-free folks
MUST TRY: Getting someone else to cook them, they usually taste better I think
