Eating healthy doesn't mean you can't have yummy healthy treats! Treats being the keyword. Treat is a once in awhile thing.
I love making treats but I often toss them after the first night because I will sit and eat them all... not a good thing! :)
One thing that I have been learning in our healthy eating adventure is that sweetening up a dessert does not require SUGAR. There are other ways - more healthy ways of sweetening up that dessert!

Coconut Blondies with Buttercream Frosting
The Ingredients:
1 cup Artisana Coconut Butter
3 Farm Fresh Brown Eggs
1 cup dates, pitted
1/2 tsp baking soda
1 1/2 tsp Vanilla Extract (I used my Mexican Vanilla)
3 drops Stevia Extract
1/2 cup rough chopped walnuts
Date Mixture
1 cup dates, pitted
1/2 tsp Vanilla Extract (I used my Mexican Vanilla)
1 TBSP Coconut Oil
The Directions:
Preheat oven to 325 degrees.
I used my kitchen aid mixture, you can use a mixing bowl and hand mixer.
Blend Eggs, Vanilla and Baking Soda.
Add in one cup of coconut butter and mix batter until creamy. (set aside)
I added dates to my small food processor. Process with 3 TBSP of water until dates are broken up. Add vanilla and coconut oil. Mix until everything is mixed in and the dates are mashed.
Add Date mixture and 3 drops of liquid stevia into the creamy cake mixture. Add the chopped walnuts and continue to mix until evenly distributed.
Lightly grease a 9x9 baking dish with coconut oil. Pour batter into baking dish and bake at 325 degrees for 20 - 25 minutes. Test center with a tooth pick. Let the Blondie cool completely before icing.
The Icing -
1 cup organic palm shortening
1 1/2 tsp Vanilla Extract
3 TBSP coconut milk
1 dropper full of Stevia Extract
1/4 cup shredded unsweetened coconut
The Directions:
With a hand mixer, blend palm shortening until light and fluffy.
Add vanilla extract, liquid stevia, coconut oil and continue to blend. Once everything is mixed well add shredded coconut and mix with spatula.
Paleo Buckeyes
The Ingredients:
Filling
1 cup pecans
1 cup dates
2 tsp cocoa powder
1/4 cup unsweetened coconut
2 drops stevia (optional)
Chocolate Coating
Coconut Oil - melted
1 TBSP Cocoa Powder
The Directions:
In the food processor, add the pecans and chop until the pecans are fine textured. Stop before making Pecan butter :)
Add the rest of the ingredients. Process until all the ingredients turn to a dough ball.
Form dough into balls and set aside.
In a tupperware container add dough balls and pour the chocolate mixture over top. If you need to geive the balls a shake or two until they are all covered in the chocolate.
Place the Paleo Buckeyes in the freezer until the chocolate hardens.
** Please note - Coconut Oil melts at room temperature so store in freezer or in fridge.
